2 ribeye or sirloin steaks (1-inch thick, about 10-12 oz each)

2 tbsp beef tallow (Use original or any flavor for an extra kick!)

1 tsp sea salt

1/2 tsp freshly ground black pepper
Instructions

Prepare the Steaks: Remove steaks from the fridge 30-60 minutes before cooking to reach room temperature. Pat dry with paper towels and season generously with sea salt and black pepper on both sides.

Heat the Tallow: In a heavy-bottomed cast-iron skillet, melt 2 tbsp of Fat Brothers beef tallow over medium-high heat until shimmering, about 2-3 minutes.

Sear the Steaks: Place steaks in the skillet, ensuring they don’t touch. Sear undisturbed for 3-4 minutes until a golden-brown crust forms. Flip and sear the other side for 3-4 minutes for medium-rare (internal temperature of 130-135°F or 54-57°C).

Rest: Remove steaks from the skillet and let rest on a cutting board for 5 minutes to lock in juices.
