Roasted Veggies with Tallow

Our roasted vegetables, kissed with premium beef tallow, deliver a crispy exterior and tender interior bursting with rich, savory flavor, making every bite a wholesome delight.

Ingredients

  • 2 cups carrots, peeled and cut into 1-inch chunks

  • 2 cups zucchini, sliced into 1/2-inch rounds

  • 1 red bell pepper, cut into 1-inch pieces

  • 1 red onion, cut into wedges

  • 1/4 cup beef tallow (original or flavored for a unique twist!)

  • 1 tsp sea salt

  • 1/2 tsp black pepper

  • 1/2 tsp dried thyme (optional)

  • 1/2 tsp garlic powder (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

  2. Prepare the Vegetables: Wash and cut all vegetables into uniform pieces to ensure even roasting. Pat dry with a clean towel to remove excess moisture.

  3. Coat with Tallow: In a small saucepan or microwave-safe bowl, melt the beef tallow until liquid (about 30 seconds in the microwave or 2-3 minutes on low heat). In a large bowl, toss the vegetables with the melted tallow until evenly coated.

  4. Season: Sprinkle the vegetables with sea salt, black pepper, and, if desired, dried thyme and garlic powder. Toss again to distribute the seasonings evenly.

  5. Roast: Spread the vegetables in a single layer on the prepared baking sheet, ensuring they don’t overlap. Roast for 25-30 minutes, flipping halfway through, until golden brown and crispy on the edges.

  6. Serve: Transfer the roasted vegetables to a serving platter. Serve hot as a side dish or mix into salads, grain bowls, or enjoy on their own.
