4 large russet potatoes, peeled and cut into 1/4-inch fries

1/2 cup beef tallow (use original or any flavor for an extra kick!)

1 tsp sea salt

1/2 tsp black pepper (optional)

1/2 tsp smoked paprika (optional)
Instructions

Prepare the Potatoes: Peel and cut potatoes into 1/4-inch thick fries. Rinse under cold water to remove excess starch, then pat dry thoroughly with a clean towel.

Heat the Tallow: In a large, heavy-bottomed pot or deep fryer, heat the beef tallow to 350°F (175°C). Use enough tallow to submerge the fries (about 1/2 cup for a medium pot).

First Fry: Working in small batches, fry the potatoes for 4-5 minutes until soft but not browned. Remove with a slotted spoon and drain on paper towels. Let cool for 10 minutes.

Second Fry: Increase the tallow temperature to 375°F (190°C). Fry the potatoes again in batches for 2-3 minutes until golden and crispy. Drain on fresh paper towels.

Season: Immediately toss the fries with sea salt and, if desired, black pepper or smoked paprika for extra flavor.
